Around the mid-17th century, in Grand Cairo (Egypt), there were thousands of coffee shops in the city, but only a few people were found who understood the art of roasting coffee beans.

In Turkey at this time, individual cylindrical coffee roasting tanks made of metal were developed, usually tin plate or tinned copper, cylindrical tanks to resemble traditional Turkish grinders. Coffee roasting tanks often have legs so they can be easily placed on hot coals, on a fire or on a charcoal grill.

The coffee roasting tank has a handle to move the coffee beans into the roaster. The coffee roaster must continuously turn the crank and increase the heat until the coffee beans turn golden brown. The roasted coffee beans are then ground using a coffee grinder.
