As the water in the bottom chamber is heated and gases begin to escape, a vacuum is created to move the coffee to the top chamber. After the fire is extinguished, the air in the bottom chamber begins to cool, causing another gap and pulling the coffee down. The first version was born in 1830 in Germany and then spread throughout Europe and was popular everywhere. Later, there were many new and improved versions that were more suitable.
